- For the muffins:
- 2 cups flour
- 1 tablespoon + 1 teaspoon baking powder
- 2 teaspoons pie spice
- ½ teaspoon salt
- 1 cup buttermilk
- 2 eggs
- ¼ cup vegetable oil
- 2 tablespoons maple syrup
- ½ cup brown sugar, packed
- 1 cored apple, grated
- ½ cup oats
- For the glaze (optional):
- 1 cup powdered sugar, sifted
- 2-3 teaspoons milk
- ¼ teaspoon vanilla
- ½ teaspoon ground cinnamon
Instructions
- Preheat oven to 375° F.
- Grease or line a 12-cup muffin tin.
- In a large mixing bowl, whisk together the flour, baking powder, pie spice, and salt.
- Add buttermilk, eggs, oil, maple syrup, and brown sugar.
- Whisk until combined.
- Fold in grated apple.
- Stir in the oats.
- Fill muffin tins ¾ of the way full with the muffin batter, then bake for 15-20 minutes.
- Remove muffins from the oven and allow to cool.
- While moffuins are cooling, whisk together powdered sugar, milk, and cinnamon until smooth.
- Drizzle this glaze over the muffins and serve.
Notes
To freeze muffins, allow muffins to cool completely. Then, feeze for 30 minutes on a cookie sheet. Once frozen, place muffins in freezer bags and store up to 3 months!
