How To Make Apple Muffins

  1. Preheat oven to 375° F.
  2. Grease or line a 12-cup muffin tin or two 6-cup muffin tins.
  3. In a large mixing bowl, whisk together the flour, baking powder, pie spice, and salt. 
  4. Add the buttermilk, eggs, oil, maple syrup, and brown sugar. Whisk to combine.
  5. Fold in the grated apple.
  6. Fold in the oats.
  7. Fill the muffin tins about ¾ of the way full with the muffin batter, then bake for 15-20 minutes, or until the centers are set and the tops are lightly golden browned. 
  8. Remove the muffins from the oven and allow to cool.
  9. Meanwhile, make the glaze: In a separate bowl, whisk together the powdered sugar, milk, and cinnamon until smooth. 
  10. Drizzle the glaze over the muffins and serve.

Tips For Making Apple Oat Muffins

  • Use any kind of apple you like. I prefer Granny Smith or Honeycrisp. Use your favorite kind.
  • You can grate the apple with the skin on! I promise you won’t even notice any bits of skin in the muffins.

  • The apple will start to brown after sitting out, so it might be better if you do it right before it is needed. 
  • Any pie spice will work – pumpkin pie spice and apple pie spice are the most accessible.

  • If you don’t have buttermilk, you can make your own by combining 1 cup milk with the juice of 1 lemon. Let the mixture sit for 5 minutes, then pour into the bowl.
  • You can omit the cinnamon from the glaze if preferred.

  • If you don’t want to make & use a glaze with these muffins, that’s okay!
  • These muffins will stay fresh for 3-4 days when stored in an airtight container.

Can You Freeze Apple Muffins?

Yes! Muffins are the perfect food to freeze for easy breakfasts or snacks!

Once the muffins have baked and cooled, arrange them in a single layer on a dish or baking sheet. Pop the sheet in the freezer for 30 minutes (this is flash freezing!) or until the muffins are frozen solid.

Place frozen muffins in airtight freezer bags. Gently place the freezer bag into another freezer bag.

Repeat until all of the muffins are packed. Now, label and freeze the bags for up to three months.

How to Re-Heat Frozen Muffins

Thaw at room temperature for several hours. Then, enjoy or gently heat up int he oven at 350 degrees for just a few minutes!

For a quick thaw and eat method, place a single muffin in one paper towels and place in the microwave for a few seconds. That’s one of those lazy morning hacks! :)

  • 2 cups flour
  • 1 tablespoon + 1 teaspoon baking powder
  • 2 teaspoons pie spice
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 eggs
  • ¼ cup vegetable oil
  • 2 tablespoons maple syrup
  • ½ cup brown sugar, packed
  • 1 cored apple, grated
  • ½ cup oats
  • For the glaze (optional):
  • 1 cup powdered sugar, sifted
  • 23 teaspoons milk
  • ¼ teaspoon vanilla
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375° F.
  2. Grease or line a 12-cup muffin tin.
  3. In a large mixing bowl, whisk together the flour, baking powder, pie spice, and salt.

Notes

To freeze muffins, allow muffins to cool completely. Then, feeze for 30 minutes on a cookie sheet. Once frozen, place muffins in freezer bags and store up to 3 months!
