Peanut butter muffins are a super-quick breakfast to serve your family. Enjoy the crunchy granola topping that gives these muffins a healthy and tasty boost!

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup peanut butter, crunchy or creamy
  • 1 cup whole milk
  • 1 egg, beaten
  • 3 tablespoons unsalted butter, melted
  • 1 1/2 cups granola

Instructions

  1. Preheat oven to 350° F.
  2. Place all the dry ingredients, except the granola, in a medium-sized mixing bowl and stir.
  3. Add the peanut butter and whisk or beat until incorporated.
  4. Add in the milk, egg, and butter.
  5. Grease 12 muffin cups in a medium-sized muffin pan and fill each muffin cup about 3/4 full with batter.
  6. Evenly sprinkle some granola over each muffin.
  7. Bake for 15-18 minutes or until golden brown.
  8. Remove from oven and let muffins slightly cool before serving.
