  • 1 large onion
  • 2 tbsp butter
  • 2 cups beef broth
  • 1 cup low sodium chicken broth
  • 1 cup Gruyere cheese, shredded
  • several slices of thick french bread or baguette

Instructions

  1. Thinly slice the onion.
  2. Add butter to medium sauce pan and saute the onions on medium-low heat until clear and translucent, stirring continuously.
  3. Add in chicken broth and bring to a boil.
  4. Stir in beef broth, cover and simmer for 20 minutes.
  5. Using a heart-shaped cookie cutter, cut bread into heart shapes and set aside.
  6. Once soup is finished simmering, place in oven-proof serving bowls.
  7. Place heart-shaped bread pieces over soup and sprinkled with shredded cheese.
  8. Broil in oven just until lightly brown — approximately 3 minutes.
