- 1 jar your favorite salsa
- 1 pkg taco seasoning
- 3 cups cheddar cheese, shredded
- 1 cup Monterrey Jack cheese, shredded
- 1 lb ground beef, cooked and drained
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In medium-sized skillet, combine ground beef and taco seasoning and cook according to package directions for traditional taco meat.
- In the meantime, cook your lasagna noodles until just past el dente, according to package directions.
- Drain and rinse the lasagna noodles, then line the bottom of a casserole dish with three (or more as needed).
- Spread half of the meat mixture over the noodles, then top with 3/4 cup salsa and then 1 cup cheddar cheese. Repeat with a second layer – noodles, meat, salsa, cheese.
- Top the lasagna with the final 3 lasagna noodles and spread the top with remaining cheddar cheese as well as the Monterrey Jack Cheese.
- Cover loosely with aluminum foil and bake in oven until cheese is melted, about 20 minutes. Remove the foil the last five minutes if you want a slightly browned and crunchy top.
- Garnish with tomatoes, sour cream and cilantro, if desired.
