Blueberry Lemon Pound Cake

Moist, lemony and absolutely gorgeous, this blueberry lemon pound cake will leave your tastebuds on cloud nine with loads of homemade whipped cream and bunches of super-food blueberries!

Ingredients

Scale
  • c. all purpose flour
  • 1 tsp. baking powder
  • ½ tsp. salt
  • 1 c. butter, softened
  • 2 c. granulated sugar
  • 4 large eggs
  • 2 tsp. vanilla extract
  • ¼ c. lemon juice
  • 1 whipped cream
  • 2 c. heavy whipping cream
  • 1 tsp. vanilla extract
  • 2 c. fresh blueberries

Instructions

  1. Preheat the oven to 350˚F.
  2. Grease a loaf pan and line it with parchment paper (this makes it easier to remove from the pan). Be sure the parchment paper hangs over the sides.
  3. In a a large mixing bowl, cream together the butter and sugar.
  4. Add the eggs and vanilla and mix for one minute.
  5. Add the dry ingredients and lemon juice. Mix until just combined. Do not over mix.
  6. Pour the batter into the prepared pan and bake 65–75 minutes, or until a toothpick inserted in the middle of the loaf comes out clean.
  7. Gently remove the loaf from the pan with the parchment paper and let rest on a cooling rack.
  8. Cool completely before assembling shortcakes.

Whipped Cream

  1. Combine all ingredients in a large mixing bowl and mix on low for one minute.
  2. Change mixer setting to high and continue to mix until stiff peaks form.

To Assemble Pound Cake

  1. Slice cake into serving slices.
  2. Top with whipped cream, blueberries, an additional slice of cake and additional whipped cream and blueberries.
  3. Repeat for each person.
  4. Serve immediately.
