- 1 honey crisp apple, peeled and finely chopped
- 2 small Granny Smith apples, peeled and finely chopped
- 1 tbsp. Lemon Juice
- 1 tbsp. Cinnamon
- ⅛ tsp. Nutmeg
- ¼ c. Brown Sugar
- ¼ c. Granulated Sugar
- ½ tsp. Vanilla
- pinch salt
- 1 egg
- 1 store-bought Double Pie Crust, or two single pie crusts
Instructions
- Peel, core, and finely chop apples. Place in a medium bowl.
- Sprinkle apples with lemon juice.
- Sprinkle sugars and spices and vanilla over apples and mix to combine.
- Allow to sit for at least 10 minutes.
- Remove pie shells from freezer and allow to come to room temperature.
- Use a rolling pin to slightly flatten and use an apple shaped cookie cutter to cut out 12 shapes total from both shells.
- You may need to re-roll pastry to get the 12 pieces. Preheat air fryer for 5 minutes at 400˚F.
- Fill pastry with 1 tbsp. of apple filling.
- Cover with another pastry and flute edges with a fork.
- Make 3 slits in the center of pies with a sharp knife.
- Make a quick egg wash by beating the egg with one tablespoon of water.
- Brush pies with beaten egg wash.
- Once you have 6 pies prepared you can place them in the preheated air fryer and cook for 10 minutes at 350˚F.
- Continue filling and fluting remaining hand pies, brush with egg wash and then cook for 10 minutes at 350˚F.
- Enjoy warm or even at room temperature! Goes great with vanilla bean ice cream too!
